Frozen Grilled Eggplant
This perfectly ripe eggplant comes lightly grilled with a mild smoky flavour, and it’s ready to cook from frozen. Just heat on the grill or in the oven and enjoy in warm Mediterranean grain salads; put on a sandwich with hummus, sliced tomatoes, sprouts and grilled halloumi; layer it into moussaka or eggplant Parm; or drizzle a plateful with runny tahini, sprinkle with flaky sea salt and serve as a side dish to any meal.
